A Quick Summer Supper

Warm weather is here and so is more fresh produce! We had an easy dinner of pork chops and garden goodies tonight. I’ve included the recipe for my cornbread. Throw in some green beans, cucumbers, onions, tomatoes…YUMMY!

Buttermilk Cornbread
Preheat oven to 450 degrees. Coat your pan
with non stick spray/oil and place in oven.
Mix 3 cups cornmeal, 1 3/4 cup milk,
1 egg, and about 1 TBSP of oil.
Mix until combined. Carefully remove
hot pan from oven and pour batter in. Level
batter in pan by shaking gently. Bake for
about 20 minutes at 450 degrees. Turn
out onto pan after removing from oven.
